History

Immerse is a place like no other - under an hour from Melbourne, but galaxies away from the stress of everyday life.  With vineyard, restaurant, day spa and luxury accommodation, it is the place where lovers of good food and wine can re-discover and indulge in everything life has to offer.

The Immerse property including the original homestead, roses and vineyards are 20 years old.  With a vision of stunning light filled space and soft wooden floorboards, a transformation has ensured the beautiful qualities from the past were enhanced and the modern features come together seamlessly.

Four grape varieties are grown on the Immerse property - Sauvignon Blanc, Chardonnay, Pinot Noir and Shiraz producing fruit of intense flavour and consistently high quality.

In developing the wine, our first consideration was simply to make wines that people will love to drink - that means fresh and vibrant with lively fruit character and enough structure to ensure they stand the test of time.  Our second criteria is to create wines that go wonderfully well with food, as eating and drinking is a high priority at Immerse.  After that we've simply left it up to the fruit and the winemakers of course!

The perfect way to complete an Immerse experience is to stay a night or two with us.  Our beautifully appointed, individually decorated rooms, located within our Guesthouse, Lodge and Cottages continue the theme of luxury with views to the vineyard and rose gardens.  Let us transport you to a time of where nothing but leisure matters.
